I know I have been a bit MIA here lately. School has taken up all my recent free time! I’ve still been very active on my Instagram, so if you want to see what I have been up to, make sure to follow me there.
Work and school both keep me very busy, but I still want to make sure I keep eating out down to once a week. While hubby and I are big foodies, we would eat out every day if we could! But being responsible and living on a budget also means keeping things into perspective.
I’m working on a new food series, Minimalistic Meals. I have been super obsessed with creating meals from 5 ingredients or less, and finally am getting around to sharing with you all. One of the biggest hits with my husband so far has been my Crockpot Ginger BBQ Shredded Pork. One utensil, three ingredients, and uber delicious. It can’t get any more minimalistic than that.
Feeds 6-8 people with left overs
3-5 lb pork roast
1 (12oz) bottle Not Your Father’s Ginger Ale (or other ginger beer)
1 C Jack Daniels Original No. 7 BBQ Sauce (or your favorite musqite style bbq sauce)
Turn crockpot on low. Rinse and pat dry the pork roast, and place it in the bottom of your crockpot. Pour in the ginger beer and pour the BBQ sauce on top of the roast. Simmer for 6-8 hours, or until your roast falls apart easilty. Shred and serve. We enjoy eating the pulled pork on brioche buns and serving up with veggies or fries.
You can also turn your crockpot on high and cook 4-6 hours.
If you are not a fan of cooking with alcohol, substitute 1 c of 100% apple joice and 1/2 C ginger ale.
For a stronger ginger flavor, mince up 1/2 inch piece of fresh ginger.
